Ingredients
  

  • **Croquettes**
  • 1 | lb | cod fillets | skinless or haddock/mackerel
  • 2 | | potatoes | medium ~450g total, boiled
  • 1 | | onion | small or 4 spring onions
  • 2 | tbsp | parsley | fresh chopped
  • 1 | tbsp | dill | fresh or chives chopped
  • 1 | | lemon | zest + juice
  • 1 | | egg | large beaten
  • 1 | cup | panko breadcrumbs | ~100g
  • | | salt | to taste
  • | | pepper | to taste
  • 2 | tbsp | vegetable oil | for frying
  • **Tartar Sauce**
  • 0.5 | cup | mayonnaise | ~120g
  • 2 | tbsp | gherkins | finely chopped ~30g
  • 1 | tbsp | capers | chopped ~15g
  • 1 | tbsp | dill | fresh chopped
  • 1 | tsp | lemon juice |
  • 1 | tsp | dijon mustard |

Instructions
 

  • 1 | Prep fish | Poach fish in milk over low heat 5 mins until flaky, OR bake 350°F (175°C) 10 mins. Flake and cool.
  • 2 | Boil potatoes | Peel, boil, and mash 2 medium potatoes until smooth.
  • 3 | Mix ingredients | Combine mashed potatoes, flaked fish, onions, herbs, lemon zest/juice, egg, salt, pepper, and HALF the breadcrumbs. Add more breadcrumbs if too wet.
  • 4 | Shape patties | Form 8-12 patties. Coat in remaining breadcrumbs. Chill 15-30 mins on parchment-lined baking sheet.
  • 5 | Cook - Pan Fry | Heat 2 tbsp oil in skillet over medium. Fry 3-4 mins per side until golden. Drain on paper towels.
  • 5 | Cook - Air Fryer | Spray patties with oil. Air fry 400°F (200°C) 10-12 mins, flip halfway.
  • 6 | Make sauce | Whisk all tartar sauce ingredients. Chill while croquettes cook.
  • 7 | Serve | Plate hot croquettes with tartar sauce, lemon wedges, and side salad.
