  • 4 cups cubed seedless watermelon about 1/2 a small watermelon
  • 1 cup crumbled feta cheese block feta is best
  • 1 English cucumber halved lengthwise and sliced
  • ¼ cup thinly sliced red onion
  • ¼ cup fresh mint leaves torn
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice or lemon juice
  • Salt and freshly ground black pepper to taste

Instructions
