Ingredients
  

  • 4 boneless skinless chicken breasts 1.5 lbs/680g, pounded ½-inch
  • tsp sea salt divided
  • 1 tsp smoked paprika
  • 2 tbsp avocado oil
  • 6 fresh garlic cloves minced
  • 1 cup sun-dried tomatoes oil-packed chopped
  • 3 cups fresh spinach
  • cups heavy whipping cream
  • ½ cup chicken bone broth
  • 1 cup freshly grated Parmesan Notes: block cheese only
  • 1 tsp Italian seasoning
  • ¼ cup fresh basil chopped

Instructions
 

  • 1:
  • Season chicken with 1 tsp salt + paprika. Heat avocado oil in skillet over medium-high. Cook chicken 5-6 min/side until golden. Remove.
  • 2:
  • Lower heat. Add garlic 30 sec. Add sun-dried tomatoes, spinach, cream, broth, ½ tsp salt, Italian seasoning. Simmer 5 min.
  • 3:
  • Add chicken back + juices. Simmer 8-10 min until sauce thickens. Top with Parmesan + basil. Serve immediately.
