Ingredients
  

  • 2 | lbs | chicken wings flats + drumettes
  • 1 | tbsp | baking powder NOT baking soda
  • 1 | tsp | kosher salt
  • ½ | tsp | garlic powder
  • ½ | tsp | paprika smoked preferred
  • ¼ | tsp | black pepper
  • | | Cooking spray optional
  • | | Buffalo sauce BBQ, or hot honey (serving)

Instructions
 

  • 1 | Pat wings bone-dry with paper towels (moisture = enemy #1)
  • 2 | Mix dry rub: baking powder + salt + garlic + paprika + pepper
  • 3 | Toss wings in seasoning until evenly coated
  • 4 | Preheat air fryer 380°F (190°C) for 3 minutes
  • 5 | Single layer in basket (no overlap - batches if needed)
  • 6 | Air fry 12 minutes at 380°F
  • 7 | Flip wings, increase to 400°F (200°C)
  • 8 | Air fry 10-12 more minutes until 165°F internal & golden
  • 9 | Hot toss in sauce, rest 5 minutes, serve crispy!
