- 4 salmon fillets
- 2 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic minced
- 1 shallot finely chopped
- ½ cup sun-dried tomatoes sliced
- 1 cup cherry tomatoes halved
- 4 cups fresh spinach
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 1 tbsp pesto
- ½ tsp paprika
- ½ tsp dried oregano
- Salt and black pepper to taste
- Juice of ½ lemon
- Fresh basil for garnish
Pat the salmon dry and season both sides with salt, black pepper, and paprika.
Heat olive oil and butter in a large skillet over medium-high heat.
Sear the salmon for 3 to 4 minutes per side until golden brown, then remove and set aside.
In the same skillet, cook the shallot and garlic for 1 minute.
Add the cherry tomatoes and sun-dried tomatoes, then cook for 2 to 3 minutes.
Stir in the heavy cream, Parmesan, pesto, and oregano.
Simmer gently for 2 to 3 minutes until the sauce thickens slightly.
Add the spinach and cook until wilted.
Return the salmon to the skillet and spoon the sauce over the fillets.
Finish with lemon juice and fresh basil before serving.
