Ingredients
  

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic minced
  • 1 shallot finely chopped
  • ½ cup sun-dried tomatoes sliced
  • 1 cup cherry tomatoes halved
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 tbsp pesto
  • ½ tsp paprika
  • ½ tsp dried oregano
  • Salt and black pepper to taste
  • Juice of ½ lemon
  • Fresh basil for garnish

Instructions
 

  • Pat the salmon dry and season both sides with salt, black pepper, and paprika.
  • Heat olive oil and butter in a large skillet over medium-high heat.
  • Sear the salmon for 3 to 4 minutes per side until golden brown, then remove and set aside.
  • In the same skillet, cook the shallot and garlic for 1 minute.
  • Add the cherry tomatoes and sun-dried tomatoes, then cook for 2 to 3 minutes.
  • Stir in the heavy cream, Parmesan, pesto, and oregano.
  • Simmer gently for 2 to 3 minutes until the sauce thickens slightly.
  • Add the spinach and cook until wilted.
  • Return the salmon to the skillet and spoon the sauce over the fillets.
  • Finish with lemon juice and fresh basil before serving.
