- 4 salmon fillets 6 oz each.
- 2 tbsp olive oil.
- 4 cloves garlic minced.
- 1.5 cups cherry tomatoes halved.
- 3 cups baby spinach.
- 1 cup heavy cream.
- ¾ cup fresh grated parmesan.
- 1 tbsp butter.
- 1.5 tsp Italian seasoning.
- Juice and zest of 1 lemon.
- Salt and pepper to taste.
- ¼ cup fresh basil chiffonade.
Pat the salmon dry and season with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat.
