Ingredients
  

  • 4 salmon fillets 6 oz each.
  • 2 tbsp olive oil.
  • 4 cloves garlic minced.
  • 1.5 cups cherry tomatoes halved.
  • 3 cups baby spinach.
  • 1 cup heavy cream.
  • ¾ cup fresh grated parmesan.
  • 1 tbsp butter.
  • 1.5 tsp Italian seasoning.
  • Juice and zest of 1 lemon.
  • Salt and pepper to taste.
  • ¼ cup fresh basil chiffonade.

Instructions
 

  • Pat the salmon dry and season with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear the salmon 3 to 4 minutes per side until golden and nearly cooked through.
  • Remove the salmon and set aside.
  • Lower the heat to medium, then add garlic and butter and sauté until fragrant.
  • Add the cherry tomatoes and cook until softened.
  • Stir in the spinach and cook until wilted.
  • Pour in the cream and parmesan, then simmer until the sauce thickens.
  • Add the lemon juice and zest, then taste and adjust seasoning.
  • Return the salmon to the skillet and spoon sauce over the top.
  • Garnish with basil and serve immediately.

Notes

  • Use freshly grated parmesan for the smoothest sauce.
  • Keep the sauce at a gentle simmer, not a boil.
  • If the sauce becomes too thick, add a splash of cream or broth.
  • For extra crispy salmon, use a cast iron skillet.
