- For the Cowboy Butter Sauce:

- 4 cloves garlic minced
- 2 tbsp fresh parsley finely chopped
- 1 tbsp fresh chives chopped
- 1 tbsp fresh dill chopped (or 1 tsp dried)
- 1 tbsp Dijon mustard
- 1 tsp red pepper flakes adjust to taste
- 1 tsp smoked paprika
- 1 tsp onion powder
- ½ tsp dried oregano
- Juice of ½ lemon
- ½ tsp black pepper
- ½ tsp salt
- For the Chicken:
- 4 boneless skinless chicken breasts (about 2 lbs)
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- ⅓ cup heavy cream
- ¼ cup chicken broth
- For Garnish:
- 2 tbsp fresh parsley chopped
- Lemon wedges
Prepare the Cowboy Butter Sauce:
In a small saucepan, melt the butter over medium-low heat until just melted but not browned. Add minced garlic and cook for 30 seconds until fragrant. Remove from heat and stir in parsley, chives, dill, Dijon mustard, red pepper flakes, smoked paprika, onion powder, oregano, lemon juice, salt, and pepper. Set aside.
Cook the Chicken:
If chicken breasts are thick, slice them horizontally to create thinner cutlets (about ¾ inch thick). Pat chicken dry with paper towels, then season both sides with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden and internal temperature reaches 165°F (74°C). Transfer chicken to a plate and cover loosely with foil.
Make the Creamy Sauce:
In the same skillet, add chicken broth and scrape up any browned bits. Reduce heat to medium-low and add the cowboy butter mixture, stirring to combine. Pour in heavy cream and stir for 2-3 minutes until sauce thickens slightly. Return chicken to the skillet, spooning sauce over each piece. Simmer for 2-3 minutes.
