Classic Potato Salad: A Timeless Summer Side Dish

My grandmother used to toss her potatoes with apple cider vinegar while they were still warm. I never understood why until I tested it myself: warm potatoes absorb the vinegar like a sponge, and it changes the final flavor completely. Without that step, the salad tastes flat.

I’ve tested this recipe with 3 types of potatoes. Yukon Gold wins — they hold their shape and have a buttery flavor. Russets fall apart. Red potatoes work but are less creamy.

This is my default side dish for summer BBQs. It takes 20 minutes to make, and it actually tastes better the next day.

Why This Recipe Works

  • Waxy potatoes (Yukon Gold) hold their shape and don’t turn mushy.
  • Vinegar on warm potatoes adds depth and balances the creamy dressing.
  • Made ahead, the flavors meld and get even better.
  • Simple pantry ingredients you probably already have.

Ingredients

  • 3 lbs Yukon Gold potatoes, cut into ¾-inch cubes
  • 1 tbsp salt (for the cooking water)
  • 2 tbsp apple cider vinegar (for the warm potatoes)

For the dressing:

  • 1 cup mayonnaise
  • 2 tbsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper

For assembly:

  • ½ cup finely diced celery (about 2 stalks)
  • ⅓ cup finely diced red onion
  • ¼ cup finely chopped dill pickles
  • 3 hard-boiled eggs, peeled and chopped
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • Paprika, for garnish

Instructions

  1. Wash and cut the potatoes into uniform ¾-inch cubes. Peeling is optional.
  2. Place potatoes in a large pot and cover with cold water. Add 1 tbsp salt.
  3. Bring to a boil, then reduce to a gentle simmer. Cook 8-10 minutes, until fork-tender.
  4. Drain thoroughly. While still warm, toss with 2 tbsp apple cider vinegar. Let cool completely.
  5. In a medium bowl, whisk together mayonnaise, mustard, apple cider vinegar, sugar, salt, and pepper.
  6. In a large bowl, combine cooled potatoes, celery, red onion, pickles, eggs, dill, and parsley.
  7. Pour the dressing over the potato mixture. Gently fold until evenly coated.
  8. Refrigerate at least 2 hours (overnight is better).
  9. Garnish with paprika and fresh herbs before serving.

Tips for the Best Potato Salad

  • Start potatoes in cold water, not boiling. This ensures even cooking.
  • Salt the cooking water generously — it’s your best chance to season from within.
  • Toss warm potatoes with vinegar. They absorb it like a sponge.
  • Make it a day ahead. The flavors meld and improve overnight.
  • Hold back some fresh herbs and add them just before serving for a pop of color.

This salad pairs beautifully with our lemon herb chicken and veggies.

Recipe Variations

  • Smoky: Add crumbled bacon.
  • Lighter: Swap half the mayo for Greek yogurt.
  • Tangy: Add 1 tbsp relish.
  • Spicy: Add a dash of smoked paprika or Cajun seasoning.
  • Colorful: Add diced bell peppers.

Storage & Make-Ahead

  • Refrigerate in an airtight container for up to 3-4 days.
  • Do not freeze — the texture becomes watery.
  • If dry after refrigeration, stir in 1 tbsp mayonnaise.
  • Don’t leave at room temperature for more than 2 hours (1 hour if above 90°F).

Frequently Asked Questions

How far in advance can I make potato salad?
Up to 24-48 hours ahead. Store in an airtight container in the fridge. Many cooks prefer making it a day ahead — the flavors meld beautifully.

Why did my potato salad turn out watery?
Usually because the potatoes weren’t drained thoroughly, or you used high-starch potatoes. Use waxy potatoes (Yukon Gold, red), drain completely, and cool before mixing.

Can I make potato salad without mayonnaise?
Yes. Substitute Greek yogurt, sour cream, olive oil and vinegar, or hummus. German-style potato salad uses a vinegar-based dressing and is served warm.

How long can potato salad sit out?
No more than 2 hours at room temperature (1 hour if above 90°F). At picnics, keep it chilled in a cooler or on ice.

What can I add to make it more interesting?
Bacon, tarragon, chives, basil, capers, olives, roasted red peppers, different mustards, horseradish, or curry powder.

Why add vinegar to warm potatoes?
Warm potatoes absorb the vinegar, adding depth and preventing the salad from tasting one-dimensional.

How do I fix too much salt?
Add more unseasoned potatoes, a bit more mayonnaise, or some sour cream. A touch of sugar or lemon juice also balances saltiness.

What’s the best potato for potato salad?
Waxy varieties — Yukon Gold, red, or new potatoes. They hold their shape and don’t turn mushy. Avoid Russets.
